Haircuts


When I was pregnant with James, I pretty much accepted the fact that my baby would have no hair. I didn't have any till I was practically 2 years old. So when he was born and he actually did have some hair I was pleasantly surprised.

 He has hair!!

And never in a million years did I think his hair would be long enough to be cut on his first birthday, but it was! We took him on his 1st birthday, February 17, 2011, to get his hair cut for the first time. Look how long it had gotten!


After..So HANDSOME!

His hair grew really fast, and he ended up going back EVERY month for a trim. The lady who cut his hair would go on and on about how good he was while he got his hair cut, until we got to haircut #5. In all honesty his bad mood was probably due to the fast I misjudged what time it was. It was way PAST naptime. Here's a shot from that dreadful haircut...

I had her cut it really short that time so we wouldn't have to go back for a while. We managed to go 2 whole months between haircuts. Needless to say, his hair had gotten ridiculously long again. Time for another haircut!

I need to learn how to cut his hair, so we don't have to drop $10 every time he needs a trim. He is just so squirmy though, I'm afraid I'll nick him or mess his hair up so bad, the only way to fix it is to buzz his head! And he's just too cute to have the sweet noggin buzzed ;)

Like I said, not as scary, but he still thinks he's doing something big. Needless to say, if he gets quiet for ANY length of time now, chances are he's up to NO GOOD! I remember the days when I longed for him to start crawling/walking. Now I sometimes I wish I could sit him down and him stay still for more than .5 seconds, lol! Oh the joys of having a VERY active 20 months old :)

Six Years Together!!



Today Jed and I are celebrating six years of marriage. SIX YEARS!! In some ways it seems like just yesterday we said "I do" to each other, and in other ways it seems like it's been much longer. 

  In six years we've lived in 4 different places, had 5 dogs (down to 2 now), and had our beautiful baby boy, James. 

It hasn't been all happy, we've had our downs as well as our ups, but the ups outweigh the downs. I married my best friend and look forward to many more years with him!

New Slide!!


My friend Kayleigh posted a picture of this slide the other day. I quickly asked her if she was selling it, and she told me if I could come pick it up I could have it! Heck yeah!! LOVE free stuff! So today we borrowed my Dad's truck to go pick it up. We brought it home and cleaned it up. It's only been here a couple of hours but every time one of us goes out for any reason, James thinks he has to go out too and play on his new slide!

Chocolate Peanut Butter Fudge Cake




Several years ago my Dad signed me and my siblings up for Big Brothers/ Big Sisters. My big sister, Deidra, was AWESOME, and not only did I get great big sister, I got her whole family. This is a recipe I got from her sister Suzanne, who is a GREAT cook. (Pretty much everyone in their family is!) This cake combines my love of chocolate and peanut butter. There are simply no words for how yummy this cake is!  Here's how you make it...



These are the ingredients you will need (minus the salt, I must have had mommy brain when I grabbed it because I meant to grab the vanilla extract!)


First you mix together your flour, sugar, and baking soda. Set aside...


Then you mix butter, buttermilk, water, cocoa, your beaten eggs, and cook over medium heat until just bubbly. (I stir mine pretty much constantly to avoid scrambled eggs)


Add to your dry ingredients and mix until smooth, and then you add your vanilla and mix. Pour into baking dish and bake at 350 degrees for 25 minutes. (forgot to take a pic before I put it in the oven) DO NOT OVERBAKE!!!


Remove from oven and let sit 15 minutes.


Spread  1 1/2 cups peanut butter on top of cake. (Let sit a little so peanut butter will soften so it will be easier to spread) After I do this I put the cake in the fridge for a little bit to let the peanut butter set.


For your frosting mix butter, buttermilk and cocoa and cook over medium heat till bubbly.


Stir in confectioners sugar and vanilla, pour over cake, and you get..


THIS!! Yummy chocolate peanut butter goodness!!


So good...


Look at the layers of peanut butter and chocolate frosting. YUM!

Here's the recipe:

Chocolate Peanut Butter Fudge Cake
(Recipe by Suzanne Latta)

Cake
2 cups plain flour
2 cups sugar
1 tsp. baking soda

*Combine and set aside

2 sticks butter (margarine)
1/2 cup buttermilk
1 cup water
1/4 cup cocoa
2 eggs, beaten


*Combine and cook over medium heat until bubbly. Add to dry ingredients, and beat with electric mixer until smooth. Stir in 1 tsp. vanilla

Bake at 350 degrees in a preheated oven for 25 minutes. DO NOT OVER BAKE!!!

Let cake cool for 15 minutes then put 1 1/2 cups peanut butter on cake. Let sit until peanut butter is soft then spread over cake. 

ICING
1 stick butter
1/4 cup cocoa
7 tbsp. buttermilk

*Cook over medium heat until bubbly. Add 1 box confectioners sugar and 1tsp. vanilla. Pour over cake.

Family Day at the Falls!

  Earlier this week I read in the paper there was going to be a Halloween Super Bash at Noccalula Falls. There were going to be games, a cupcake walk, a petting zoo, and lots of other fun things to do. I thought this would be a great activity we could do together as a family, so today we packed up and headed out!
